8/8/2024 Grapes!!!!!!!!!!!!! Unfortunately they need to be pruned off so not to take nutrition away from the growing vine.
8/7/2024 Initiating the removal of the Grow Tubes to allow the hardening of the main vines for their first winter dormancy.
Hey all, we are new to this industry, so this blog is very important to share our progress. Rookie mistake! I left a gallon of our Cosby Cabernet on two ounces of Oak Chips for three weeks! It turned out to be too long! Heads Up! When it comes to adding oak to wine if the oak taste overpowers the fruit taste it’s too much oak. So don’t Wait! TASTE! TASTE! TASTE! as it progresses. Going to let this batch age in the bottles for a few months and check back.
UDATE ON COSBY CABERNET
Three months after fermenting and oak aging, possibly over oaked, the results are in! This Cabernet is amazing the oak has actually mellowed out. Never give up!

Starting off the 2024 New Year fermenting a batch of Full-Flavored Pinot Noir and a Full-Bodied Chardonnay. The grapes for these wines were grown in Woodbridge, California.
I found using a cable tie will help hold the siphon if you are using a wine pen to fill bottles from a carboy and do not have a siphon clip. Just connect the cable tie as seen above and that keeps both hands free, one to activate the pen and one to initiate the siphon at the same time!
